
In 1991 Neil Prentice and family established their Moondarra vineyard where they planted 11 low yielding clones of pinot noir. The vines are non-irrigated and they also use a minimum amount of sprays with the aim of moving to bio-dynamic farming methods. The winemaking techniques include ten days pre-fermentation maceration and whole bunches added prior to fermentation.
The Holly's Garden pinot noir grapes are grown at 850 metres above sea level in the rich volcanic soils of the Whitlands in the King Valley of Victoria where they receive an average annual rainfall of 630mm.
